We used this old receipt for our Zucchini Relish and Pickles:

6 cups grated (or thinly sliced) zucchini
1 large thinly chopped onion
1  1/4 cups of pickling salt

(syrup)
2 cups cider (braggs) vinegar
1 and 1/3 cup honey or (1 cup sugar)
1 teaspoon mustard seeds
1 teaspoon turmeric
1 teaspoon of celery seeds

Put the grated zucchini with the chopped onion in a large bowl
and then sprinkle the salt over the mixture evenly
cover with a clean towel and let stand between 4 and 5 hrs

meanwhile start the syrup by boiling the vinegar,
the honey and spices together for about 5 mins
(in a pot that will fit the zucchini mix)
remove from heat and set aside

After the zucchini mixture has been in the salt brine
for about 4 hrs drain in a colander and press a bit
so it is well drained
add this mix to the syrup mix and bring to a boil
and then reduce heat and simmer for about 15 mins

pack the relish into CLEAN canning jars
(pints are best)
we filled to 1/2 half from the top and capped/sealed
the canning jars and set then in a rack
into a boiling water bath canner
 then
we processed according to standard USDA guidlines
(around 10 mins)

(If you should try this receipt you should be familar with canning rules for safety)

The "Buzz" on "More Honey BEEEEZ"!!!

This Summer we ordered more Honey Bees. This was the first Bee delivery for this particular Post office, so they were a bit "alarmed" at some bees flying freely about, and they believed that the Nucs were damaged. So we had to drive to another county to retrieve them!

All was well and we brought them home safely.

This is how they are packed for shippment.(They are REALLY cute)!!!
Really they are!!!

The QUEEN is contained in this little cage with a few of her "Ladies in Waiting" and has to be introduced gradually to "Her new Court" the workers by opening a plug and replacing it with a sugar plug that will please the workers to accept her as their new Queen! (I was really tempted to give her a name)!!!! Ha! .....Maybe next Spring if all goes well!

They happily (with the help of the "GARBEAR in the Bee Keeping suit")! moved in to our Hives... very easily

There is a Skunk around here that wants to eat the Bees so we put this cage with chicken wire around it. It is easy to move too.
That was in late June, and now the Hives are thriving and getting ready to winter.
They have been collecting the last of the Goldenrod, which I hear gives them the winter vitamins that they will need!

Goldenrod  gathered  for natural dye

REMEMBER EAT LOTS OF HONEY!!!
GOD'S Golden Treat!

..~..~..~..~..~..~..~..~..~..~..~..~..

The "Lantern" Ground Cherries grew abundantly in our yard this year so we decided to make Jam like Laura Ingalls and her Mom and Sisters did (from the book) I think it was "Little Town on the Prairie" (or was it The Long Winter....hmmmm...Oh well, one of her wonderful books)!!! ;-)
What a delectable treat! Sweet with a faint bitter. I must say that they taste ever so wonderful raw though!!
Here is the reciept we followed from COOKS.COM
  http://www.cooks.com/rec/view/0,1623,152187-245193,00.html

GROUND CHERRY JAM

3 c. ripe ground cherries
1/4 c. lemon juice (or Real Lemon)
1/2 c. water
1 pkg. Sure-Jel
3 c. sugar

To a quart saucepan, add ground cherries, lemon, water, and Sure-Jel. Bring cherries to a boil and mash them. Be sure they are all mashed so they'll absorb the sugar. Add sugar. Boil according to directions on Sure-Jel package. This will make 3 medium jars of jam.

(remember to remove husks and wash)!
